Cloud Bread

Having too much egg whites at hands and don't know what you can do with them? Try making this soft and fluffy cloud bread that will sure to win both the kids and the adults heart alike.
This is probably not a new innovative bakes since it went viral on Tik Tok a few years ago but the idea of a soft cloud-like bread made from egg whites is so ingenious that it ought to be in everyone's recipe book.
In here, I tried a few variations with whatever I can get my hands on in my pantry: Plain white, purple sweet potato and candied walnuts and demerara sugar.




RECIPE
Yield: 2 medium cloud bread
90g Egg Whites (3 medium egg whites) - room temp
30 g Caster Sugar
1/4tsp Cream of Tartar (optional)
10 g Corn Flour/ Corn Starch
VARIATIONS
Purple Sweet Potato : 5 g Purple Sweet Potato Powder (Add into meringue with Corn Flour)
Candied Walnuts: 25g candied walnuts chopped (Fold into meringue) + 2 tbsp demerara sugar for toppings
METHOD
1. Pre heat oven to 160C. Line baking tray with a non stick parchment paper.
Place the room temperature egg in a clean stand mixer bowl with the cream of tar tar and whisk at medium speed with a whisk attachment until airy. Gradually stream in the sugar a little at a time.
2. Once all the sugar has been added, increase the speed until you reach stiff peak.
3. Fold in the corn flour then divide to two equal dollop of cloud bread. Spread the meringue to an even disc or ball.
4. Bake for 25 minutes until the top and sides start to turn golden. Turn off the oven then leave to dry completely. The bread will collapse slightly during cooling.
Alternatively, you can add purple sweet potato powder or candied walnuts and sprinkle the top with demerara sugar for the cloud bread.
